Ingredients:
- 1 lb ground pork (or beef for a different flavor)
- 2 cloves garlic, minced (optional, if you’re okay with small amounts of non-animal products)
- 1 tbsp fennel seeds
- 1 tsp red pepper flakes (adjust for spice level)
- 1 tsp smoked paprika (optional, some carnivores avoid)
- 1/2 tsp crushed black pepper (optional, depending on your strictness level)
- 1/2 tsp salt (or to taste)
- Sausage casings (optional, if making links)
Instructions:
- Prepare the Sausage Mixture: In a large mixing bowl, combine the ground pork (or beef) with all of the seasonings: minced garlic (optional), fennel seeds, red pepper flakes, smoked paprika, black pepper, and salt.
- Mix Well: Using your hands, mix the ingredients together until everything is evenly distributed. Be sure not to overwork the meat.
- Test the Flavor: If you’re unsure about the seasoning levels, fry a small patty of the sausage mixture in a pan and taste it. Adjust the seasoning (more salt or pepper) as needed.
- Form the Sausages: If you’re using sausage casings, rinse them thoroughly and stuff them with the sausage mixture. Twist them into 4-6 inch links. Alternatively, you can form the mixture into patties or leave it loose for crumbling later.
- Cook the Sausage: Heat a skillet over medium heat and cook the sausages, turning them regularly for about 8-10 minutes or until fully cooked. If you’re making patties or crumbled sausage, cook for 6-8 minutes, stirring occasionally, until browned.
- Serve: Serve your spicy carnivore sausage hot, on its own or paired with other carnivore-friendly sides like eggs or bone broth.
